This impossible coconut pie recipe is super easy to make. It makes it's own crust as it bakes and tastes like a coconut custard pie. Always a hit with everyone!

Ingredients

  • 2 cups milk

  • 1 cup flaked coconut

  • 4 large eggs

  • 6 tablespoons butter, softened

  • ¾ cup white sugar

  • ½ cup all-purpose flour

  • 1 teaspoon vanilla extract

  • ¼ teaspoon ground nutmeg

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch pie plate.

  2. Place milk, coconut, eggs, butter, sugar, flour, and vanilla in a blender; blend until well mixed. Pour into prepared pie plate. Sprinkle nutmeg on top.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.
