Baked Delicata Squash with Lime Butter

This baked delicata squash is tender and sweet, with edible skin. Delicata is an heirloom squash that's creamy yellow with green stripes on the outside and slightly sweet orange flesh — it's my favorite. My sister suggested this lime butter topping (my personal favorite), but a blend of maple syrup and butter is good too. Delicata squash are usually not very big, so plan on two servings per squash.

Ingredients

  • 2 delicata squash, halved and seeded

  • 3 tablespoons butter, softened

  • 1 tablespoon fresh lime juice

  • 1 teaspoon chili powder, or to taste

  • ½ teaspoon lime zest (Optional)

  • salt and ground black pepper to taste

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Place squash, skin-side up, into a large baking dish. Fill the dish with 1/4 inch water.

  2. Bake in the preheated oven until squash pierces easily with a fork, about 30 minutes.

  3. When the squash is almost finished, blend butter with lime juice and chili powder in a small bowl. Mix in lime zest, salt, and pepper.

  4. Remove squash from the oven, flip, and spoon butter mixture into the cavities. Serve immediately.
