Recipe Tips
You can substitute Campbell's condensed cream of chicken soup, or you can use the fat-free version of either soup.
To make 1 1/2 cups of cubed cooked chicken, cut 12 ounces of skinless, boneless chicken breast into cubes. Cook it in 4 cups of boiling water in a medium saucepan until no longer pink and the juices run clear, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
You can broil the casserole for about 1 minute after baking to lightly brown the topping.
