Starkey's Mashed Potato Pizza

Mashed potato pizza is pizza topped with mashed potatoes instead of sauce. I modeled this after a pizza I had at a restaurant called the Willoughby Brewing Company. If you like this one, try the original! You can use any toppings you like on top of your potatoes, but this is how I like it. Bon appétit!

Ingredients

  • cooking spray

  • 4 slices bacon

  • 1 (14 ounce) package fresh or thawed frozen pizza dough

  • 1 cup prepared mashed potatoes

  • 1 cup shredded Cheddar cheese

  • ¼ cup sour cream, for topping

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a pizza pan or baking sheet with cooking spray.

  2. Cook bacon in a large deep skillet over medium heat until crisp, 7 to 9 minutes. Drain on a paper towel-lined plate.

  3. Roll pizza dough into a large circle. Place dough onto the prepared pizza pan. Spread mashed potatoes over dough, leaving a small bit of crust uncovered around the outside if desired. Sprinkle Cheddar cheese over potatoes. Crumble bacon and sprinkle over top.

  4. Bake in the preheated oven until cheese is melted and bubbly, about 20 minutes.

  5. Remove from the oven and let cool for 2 minutes before slicing into 8 wedges. Top each wedge with 1/2 tablespoon of sour cream.
