These fried oysters are very simple to make. You can use the same recipe for shrimp and scallops too.

Ingredients

  • 2 quarts vegetable oil for deep frying

  • ½ cup all-purpose flour

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper

  • 2 large eggs, lightly beaten

  • ¾ cup fine bread crumbs

  • 12 ounces shucked oysters, drained

  2. Heat oil in a deep fryer to 375 degrees F (190 degrees C).

  3. Combine flour, salt, and pepper in a shallow bowl. Place eggs in another bowl. Place bread crumbs in a third bowl.

  4. Dredge oysters in flour mixture, then dip in egg and roll in bread crumbs to coat thoroughly.

  5. Cook oysters, 5 at a time, in hot oil until golden brown, about 2 minutes. Drain on a paper towel-lined plate. Serve hot.
