Mashed peas are quick and easy to make, and they're a healthier alternative to mashed potatoes. You can serve them warm or cold. I first ate them at an Irish restaurant in Singapore and fell in love!

Ingredients

  • 2 tablespoons olive oil

  • 1 (16 ounce) package frozen peas

  • 1 bunch green onions, chopped

  • 1 bunch fresh mint leaves

  • 2 tablespoons butter

  • 2 tablespoons brown sugar

  • salt and pepper to taste

Directions

  1. Heat oil in a large skillet over medium heat. Add frozen peas, green onions, and mint; cook and stir until peas are hot and tender but still bright green, 7 to 10 minutes.

  2. Pour into a bowl and mash until peas are thoroughly crushed but still slightly chunky. Add butter, brown sugar, salt, and pepper; stir until butter melts and sugar dissolves.
