I'm always searching for healthy recipes, and this flaxseed banana bread filled the bill. The flax seeds give the bread a really nutty taste.

Ingredients

  • ½ cup flax seed

  • 3 bananas, mashed

  • ¼ cup vegetable oil

  • ½ cup white sugar

  • 2 eggs

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ¼ cup flax seed

  • ½ cup chopped pitted dates

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8x4-inch loaf pan.

  2. Grind 1/2 cup flax seed in an electric coffee grinder or food processor; set aside.

  3. Beat together banana, oil, sugar, and eggs in a large bowl. Mix together flour, baking powder, baking soda, salt, ground flax seed, and 1/4 cup whole flax seed in a separate bowl. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into the prepared loaf pan.

  4. Bake in the preheated oven until a toothpick inserted into the loaf comes out clean, 55 to 60 minutes.
