Heat a large skillet over high heat. Add pork chops and sear until browned, 1 to 2 minutes per side. Transfer to a slow cooker.

Mix brown sugar, ketchup, onion, and lemon juice together in a bowl; spoon over pork chops. Cover and cook on Low until pork chops are very tender, 4 to 6 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
Recipe Tip
For faster cooking, you can also bake the pork chops in the oven at 350 degrees F (175 degrees C) for 30 minutes.
