Saltine crackers in candy? This recipe starts with a layer of crackers that are drenched in melted butter and brown sugar, quickly baked, topped with chocolate chips and almonds, then chilled until firm. It may sound odd, but if you like Almond Roca candy, you'll love this recipe. My kids want this every Christmas, and now my grandkids are asking for it too. Store in an airtight container in the refrigerator.

Ingredients

  • 1 (10 ounce) package saltine crackers, or as needed

  • 1 ½ cups butter

  • 1 ½ cups packed brown sugar

  • 2 (12 ounce) packages semisweet chocolate chips

  • 2 cups chopped almonds

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a 10x15-inch rimmed baking sheet with aluminum foil.

  2. Place crackers in a single layer over the prepared baking sheet. Use as many crackers as needed to cover the bottom of the pan.

  3. Bring butter and brown sugar to a boil in a small saucepan over low heat. Boil for 3 minutes, then pour over crackers.

  4. Bake in the preheated oven for 5 minutes.

  5. Remove from the oven and immediately sprinkle chocolate chips over top. Sprinkle almonds over chocolate chips. Use a wooden spoon to press nuts into melting chocolate.

  6. Chill in the refrigerator until set, at least 3 hours. Break into small pieces.
