Ingredients

  • 2 cups packed brown sugar

  • 1 ½ cups unsalted butter, softened

  • 1 cup white sugar

  • 1 (15 ounce) can pumpkin puree

  • 1 egg

  • 1 teaspoon vanilla extract

  • 4 cups all-purpose flour

  • 2 cups quick-cooking oats

  • 2 teaspoons ground cinnamon

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 2 cups miniature chocolate chips

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. Beat brown sugar, butter, and white sugar together in a bowl until creamy. Add pumpkin, egg, and vanilla extract; beat until smooth.

  3. Whisk flour, oats, cinnamon, baking soda, baking powder, and salt together in a separate bowl; stir into butter mixture until combined. Fold in chocolate chips.

  4. Drop 1 to 2 tablespoonfuls dough onto baking sheets spaced 2 inches apart.

  5. Bake in the preheated oven until edges are lightly browned, 10 to 12 minutes.
