My slow cooker pot roast produces tender, flavorful meat without vegetables or strong tomato flavors. Add onions and serve with mashed potatoes and dill carrots, if you like.

Ingredients

  • 1 (4 pound) boneless beef chuck roast

  • 1 tablespoon plus 2 teaspoons Worcestershire sauce, or to taste

  • 1 tablespoon Montreal-style steak seasoning

  • 2 tablespoons olive oil

  • 1 cube beef bouillon

  • 1 cup hot strong black coffee

  • 1 (8 ounce) can tomato sauce

  • 1 teaspoon dried oregano, or to taste

Directions

  1. Rub chuck roast with 1 tablespoon Worcestershire sauce. Sprinkle Montreal-style steak seasoning all over meat.

  2. Heat olive oil in a large skillet over medium-high heat. Sear meat in hot oil until browned, about 5 minutes per side. Transfer meat to a slow cooker.

  3. Dissolve beef bouillon cube in coffee and pour over meat. Pour tomato sauce over meat, season with oregano, and drizzle with remaining 2 teaspoons Worcestershire sauce.

  4. Set cooker to Low and cook until meat is tender, 8 to 10 hours.
