These roasted rosemary potatoes coated with Parmesan are deliciously crispy and great for any occasion. They smell wonderful and are super easy!

Ingredients

  • 1 ½ pounds new potatoes, cut into 1-inch pieces

  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons grated Parmesan cheese

  • 1 tablespoon chopped fresh rosemary

  • salt and ground black pepper to taste

Directions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.

  2. Toss potatoes, olive oil, Parmesan cheese, and rosemary together in a bowl; season with salt and black pepper. Spread onto the prepared baking sheet.

  3. Bake in the preheated oven for 20 minutes; stir, then continue baking until golden brown and tender, about 20 minutes more.
