Kale Salad with Pineapple Dressing

This is our favorite, healthiest treat! Even the kids love it. You can let this sit overnight to help soften the kale, or you can massage it as you toss it. You can add nuts, fruit, or freeze-dried fruit if you wish, but be sure to add any freeze-dried fruit last or it will lose its crunch.

Ingredients

  • 2 bunches kale, stems removed and leaves finely shredded

  • 1 (15 ounce) can crushed pineapple, undrained

  • cup lemon juice

  • ¼ cup sunflower seed oil

  • ½ cup sunflower seeds, or to taste (Optional)

Directions

  1. Place shredded kale in a large bowl. Mix pineapple, lemon juice, and sunflower oil together in a bowl; pour over kale and toss. Sprinkle sunflower seeds over salad.
