A buckwheat cake is a nice change from pancakes for Sunday breakfast. This is an old French Acadian breakfast from my childhood. It's best served with ham steaks and eggs with warm molasses and melted butter or margarine. Give it a try, and add fruit if you wish.

Ingredients

  • 1 cup all-purpose flour

  • 1 cup buckwheat flour

  • ¾ cup white sugar

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • ¾ cup milk

  • 1 egg

  • 2 tablespoons margarine, softened

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch baking dish.

  2. Whisk all-purpose flour, buckwheat flour, sugar, baking powder, and salt together in a bowl. Add milk, egg, and margarine; beat until batter is smooth. Pour into the prepared baking dish.

  3. Bake in the preheated oven until golden brown and a toothpick inserted into the center of the cake comes out clean, 30 to 40 minutes.
