This is a recipe that I made up one night with a friend. We put it over mahi-mahi, but it would work well over grilled chicken breast. Enjoy!

Ingredients

  • 2 cups diced seeded watermelon

  • 1 avocado - peeled, pitted, and diced

  • ¼ cup diced red onion

  • 2 tablespoons lemon juice

  • ½ habanero pepper, seeded and minced

  • 1 ½ teaspoons dried parsley

  • ¼ teaspoon salt, or to taste

Directions

  1. Combine watermelon, avocado, onion, lemon juice, habanero pepper, parsley, and salt together in a bowl; refrigerate until chilled, about 15 minutes.
