This is the best banana nut-oatmeal bread I have ever made! So full of flavor. I double the recipe and give it out as gifts, and everyone seems to appreciate it.

Ingredients

  • ½ cup shortening

  • ¾ cup white sugar

  • 2 large eggs

  • 1 cup mashed bananas

  • 1 teaspoon vanilla extract

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup quick cooking oats

  • ½ cup chopped walnuts

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.

  2. Cream together shortening and sugar in a large bowl until light and fluffy. Stir in eggs one at a time, beating well with each addition, then stir in banana and vanilla.

  3. Sift together flour, baking soda, and salt in a separate bowl. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.

  4. Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 50 to 55 minutes.
