These zucchini bars are so delicious that my family can eat the entire batch in one day! These little cakes are very easy to make and really moist. Add a pinch of cinnamon or nutmeg to the cake batter if you like.

Ingredients

  • 2 cups white sugar

  • 1 cup vegetable oil

  • 3 large eggs

  • 2 teaspoons vanilla extract

  • 2 ⅓ cups all-purpose flour

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • ¼ teaspoon baking powder

  • 2 cups grated zucchini

  • 2 ½ cups confectioners' sugar, sifted

  • ½ cup butter or margarine

  • 1 (3 ounce) package cream cheese, room temperature

Directions

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
