Steamed cabbage with garlic, thyme, and chile pepper. Delicious! It's the only way my family will eat cabbage other than in coleslaw.

Ingredients

  • 2 tablespoons butter

  • 1 onion, chopped

  • ¼ cup green bell pepper

  • 1 medium head cabbage, cored and coarsely chopped

  • ¼ cup water

  • 1 clove garlic, crushed

  • 2 sprigs fresh thyme

  • 1 Scotch bonnet chile, seeded and thinly sliced

  • salt and ground black pepper to taste

Directions

  1. Melt butter in a skillet over medium-high heat. Add onion and bell pepper; cook and stir until slightly softened, 3 to 5 minutes. Add cabbage, water, garlic, and thyme; bring to a boil. Reduce heat to medium-low; cover and steam until cabbage is tender, 8 to 10 minutes.

  2. Stir in Scotch bonnet chile until warmed through; season with salt and pepper.

Tips

For a less spicy dish, leave the Scotch bonnet chile pepper whole rather than chopping it.
