Cucumber Salad with Borage Flowers

Borage is a lovely garden plant, and both the leaves and the flowers are edible. I like to add them to this simple cucumber salad.

Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon lime juice

  • salt and freshly ground black pepper to taste

  • 1 cucumber - halved, seeded, and sliced

  • 6 borage leaves

  • 12 fresh borage flowers

Directions

  1. Combine olive oil, lime juice, salt, and pepper in a bowl and stir together. Add sliced cucumber, cover, and refrigerate for 1 hour.

  2. Sprinkle with borage leaves and borage flowers just before serving, as the flowers wilt quickly.
