Ingredients

  • 4 ½ cups whole wheat flour

  • 1 cup white sugar

  • 1 ½ teaspoons baking powder

  • 1 ½ teaspoons baking soda

  • 1 ½ teaspoons salt

  • 1 ½ teaspoons ground cinnamon

  • 1 ½ teaspoons ground nutmeg

  • 1 ½ teaspoons ground cloves

  • 3 cups pumpkin puree

  • 1 ½ cups unsweetened applesauce

  • 3 eggs

  • 2 medium bananas, mashed

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease three 9x5-inch loaf pans.

  2. Mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves together in a large bowl. Mix pumpkin puree, applesauce, eggs, and bananas together in another bowl. Add pumpkin mixture to the flour mixture, mixing until well blended. Pour batter evenly into the prepared loaf pans.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 60 minutes.

Cook's Notes:

You can use fresh pumpkin puree in place of canned. I followed Elana's Pantry's easy steps to roast my sugar pumpkin to get my puree.

To make muffins, grease three 12-cup muffin tins or line with paper liners. Bake for 30 minutes.
