This delicious Instant Pot potato soup will be on your table in less than an hour. It’s the perfect winter weeknight dinner!
Instant Pot Potato Soup Ingredients
These are the ingredients you’ll need to make this Instant Pot potato soup recipe:
- Onion: This recipe starts with a diced yellow onion sautéed with bacon and butter.
- Bacon: Opt for cherrywood-smoked bacon.
- Butter: Sauté the diced onion and bacon pieces in a tablespoon of butter.
- Potatoes: We like Yukon golds for this recipe, but you can use Russets if you prefer.
- Water: You’ll need a cup of water for this potato soup. You can use broth if you prefer.
- Garlic base: Season the soup with garlic base.
- Half-and-half: Half-and-half makes this potato soup extra creamy. Milk or heavy cream will also work, but will produce different consistencies.
- Toppings: Top each bowl of Instant Pot potato soup with black pepper, green onions, and shredded Cheddar cheese.
How to Make Potato Soup In the Instant Pot
You’ll find the full, step-by-step recipe below — but here’s a brief overview of what you can expect when you make Instant Pot potato soup:
- Sauté the onion, bacon, and butter in the Instant Pot, then transfer to a separate bowl.
- Add potatoes, water, and garlic base to the pot, then close and lock the lid.
- Select high pressure and set the timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
- Release the pressure using the natural-release method, then release remaining pressure carefully using the quick-release method.
- Unlock and mash the potatoes against the side of the pot.
- Stir in the onion-bacon mixture and half-and-half.
- Ladle until each bowl and add toppings.
Cook's Notes
- I prefer to get my saltiness from the bacon, so I don't add extra salt.
- I also like a thicker chowder-like consistency; if you like yours thinner, add more liquid.
