Ingredients

  • 1 serving cooking spray

  • ¾ pound ground beef

  • cup diced onion

  • 1 clove garlic, minced

  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)

  • 1 (8 ounce) can tomato sauce

  • 1 cup long-grain white rice

  • 1 cup water

  • 1 (1.25 ounce) package taco seasoning

  • 1 sheet aluminum foil

  • ½ (8 ounce) package grated sharp Cheddar cheese

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch casserole dish with cooking spray.

  2. Heat ground beef in a skillet over medium heat. Cook and stir, breaking up into crumbles, until browned, about 5 minutes. Add onion and garlic and cook for 5 more minutes. Mix in diced tomatoes and green chiles, tomato sauce, rice, water, and taco seasoning; stir to combine. Transfer mixture to the prepared casserole dish and cover with foil.

  3. Bake in the preheated oven for 30 minutes. Remove foil and sprinkle Cheddar cheese evenly over the top. Continue baking until cheese is golden and lightly browned, about 15 minutes more.
