Ingredients
-
1 medium red bell pepper, cut into thin strips
-
1 medium green bell pepper, cut into thin strips
-
1 large onion, sliced into petals
-
3 teaspoons olive oil, divided
-
salt and pepper to taste
-
1 pound chicken tenders, cut into strips
-
2 teaspoons fajita seasoning
-
8 (6 inch) flour tortillas, warmed
Directions
-
Preheat an air fryer to 350 degrees F (175 degrees C).
-
Place bell peppers and onion into a large bowl. Drizzle 2 teaspoons olive oil over top and season with salt and pepper. Stir until evenly combined.
-
Place chicken into a separate bowl and sprinkle with fajita seasoning. Drizzle with remaining 1 teaspoon olive oil and mix with your hands until evenly combined.
-
Add chicken to the air fryer basket and cook for 12 minutes, shaking halfway through. Transfer to a plate to let rest.
-
Add vegetable mixture to the air fryer basket and cook for 14 minutes, shaking halfway through.
-
Divide chicken and vegetable mixture among tortillas.
Cook’s Note
Add two minutes of cooking time in Step 5 if you prefer softer veggies.
I like to toast my tortillas in the air fryer as well, but it is not necessary.
