Electric Smoker Smoked Oysters

Easy recipe for smoked oysters, marinated with salt in their own natural juices (called oyster liquor), then smoked in an electric smoker. Canned oysters don't even begin to compare to these!

Ingredients

  • cherry wood chips

  • 12 fresh oysters in shells, rinsed and scrubbed clean

  • 2 pinches salt

  • 1 tablespoon Worcestershire sauce, or to taste

Directions

  1. Preheat an electric smoker to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.

  2. Shuck oysters to remove top shells. Pour oysters and juice (liquor) into a bowl; add salt and let marinate for 20 minutes. Discard top shells and wash and save bottom shells.

  3. Drain oysters and discard juice. Place each oyster into a clean bottom shell.

  4. Place shells directly onto the grate of the preheated smoker; smoke for 1 1/2 hours.

  5. Remove oysters and shells from the smoker and set on a platter. Top each with a dash of Worcestershire sauce and serve.
