Ingredients

  • ¼ cup warm water

  • 1 (.25 ounce) package active dry yeast

  • 1 cup milk

  • 5 tablespoons unsalted butter

  • ½ cup white sugar

  • 1 ½ teaspoons salt

  • ¼ teaspoon ground cinnamon

  • 2 cups mashed cooked sweet potatoes

  • 1 teaspoon lemon juice

  • 1 large egg, slightly beaten

  • 2 cups all-purpose flour, or more as needed

  • 2 tablespoons salted butter, melted

Directions

  1. Combine warm water and yeast in a measuring cup; stir to dissolve. Set aside.

  2. Heat milk, unsalted butter, sugar, salt, and cinnamon in a small saucepan over medium heat, stirring occasionally, until butter melts and milk begins to bubble.

  3. Place mashed sweet potatoes in a large mixing bowl and pour milk mixture over top. Add lemon juice and mix until smooth. Let cool to lukewarm, 10 to 15 minutes. Add egg and yeast mixture; blend well.

  4. Stir in 2 cups of flour and beat with an electric hand mixer at medium speed, about 3 minutes. Add enough additional flour to make a stiff dough. Turn onto a floured surface and knead until smooth and elastic.

  5. Place dough in a buttered bowl. Turn dough to butter top, then cover and let rise until double in size, 45 minutes to 1 hour.

  6. Punch down and knead once more, then shape into rolls. Place on a greased baking sheet, cover, and let rise until double in size, 45 minutes to 1 hour.

  7. Preheat the oven to 400 degrees F (200 degrees C).

  8. Bake in the preheated oven until golden, about 20 minutes. Brush tops with melted butter while hot.

Cook's Note:

Bake for less time if you have made your rolls small.
