If you like banana bread, cakes that take only about a minute to cook, and things that sound too good to be true, you're really going to enjoy this! Garnish with sliced banana, a dusting of cocoa, or shaved chocolate if you prefer.

Besides the significantly faster cooking time, the major advantage of this banana bread mug cake method is being able to make single-sized portions, which is a great thing for people like me. I have certain powers, but unfortunately willpower isn't one of them. If I make a whole loaf, enjoying a single portion isn't a thing.

The other nice thing about this technique is you can do it with one single overripe banana, which statistically speaking is a much more common thing than having 3 or 4 overripe bananas sitting around. Of course, if you do only have one banana, then you can't do the "fancy" brûlée garnish on top, which would be a shame, since that really takes this mug cake from dorm room to Carnelian Room (a fancy restaurant I worked at in the '80s that regularly brûléed things).

As far as the inside of this cake goes, feel free to toss in whatever you want. But be careful not to change the moisture level too much, otherwise you won't end up with the proper texture. Speaking of which, we really do want to let this cool down for that to happen. If eaten right out of the microwave, this will be much more like a banana pudding. Ingredients

  • 1 medium very ripe banana

  • 2 tablespoons packed brown sugar

  • 1 tablespoon white sugar

  • ¼ teaspoon salt

  • ¼ teaspoon baking powder

  • teaspoon baking soda

  • 3 tablespoons melted unsalted butter

  • 1 tablespoon milk

  • teaspoon vanilla extract

  • ½ cup all-purpose flour

  • ¼ cup chopped walnuts (Optional)

  • 2 tablespoons dark chocolate chips (Optional)

  • 6 slices banana

  • 1 tablespoon white sugar, or to taste

Directions

  1. Combine ripe banana, brown sugar, white sugar, salt, baking powder, baking soda, melted butter, milk, and vanilla in a mixing bowl; use a potato masher to mash the mixture into a smooth puree. Add flour and mix until just combined. Stir in walnuts and chocolate chips until evenly mixed.

  2. Transfer batter evenly into two lightly buttered coffee mugs or cups. Tap a few times on a towel to settle everything down and ensure there are no air pockets.

  3. Microwave cups, one at a time, until a toothpick comes out clean, about 1 minute.

  4. Let cool before serving.

  5. Optional: Garnish each with banana slices and dust with sugar. Brulee the tops with a blowtorch.
