Molly's Vegetarian Spaghetti Squash

This is one of my favorite recipes to make for dinner. I'm not vegetarian and neither is my fiance, but we both love it! It's not only healthy, but delicious as well.

Ingredients

  • 1 (2 pound) spaghetti squash, halved lengthwise and seeded

  • 2 (12 ounce) packages ground beef vegetarian substitute (such as MorningStar®)

  • 1 teaspoon Cajun seasoning, or more to taste

  • 1 ½ cups pasta sauce

  • 3 slices Cheddar cheese

Directions

  1. Place each squash half in a microwave-safe bowl. Fill bowls with water and cover with plastic wrap.

  2. Heat each bowl separately in the microwave on high for 10-12 minutes.

  3. Meanwhile, heat a large skillet over medium heat; add ground beef substitute and sprinkle with Cajun seasoning. Cook until crumbly and beginning to brown, 5 to 7 minutes. Add pasta sauce and reduce heat to low.

  4. Remove flesh from the spaghetti squash with a fork and add strands to the pasta sauce mixture. Place cheese slices on top to melt. Serve immediately.
