Carolyn's Breakfast Skillet

Simple one-pan meal. Tired of the same old kielbasa flavor. I had 1/2 of a kielbasa left over and I just went through the pantry looking for something new to cook with it. This is what I came up with. It was a hit with my family so I thought I would share. Serve with toast.

Ingredients

  • 3 medium potatoes, peeled and diced

  • ½ link kielbasa, diced

  • ½ small onion, chopped

  • 1 (15.25 ounce) can whole kernel corn, drained

  • 1 (14.5 ounce) can diced tomatoes

  • 1 (6.0 ounce) package pork stuffing mix

  • nonstick cooking spray

  • 3 large eggs

Directions

  1. Combine potatoes, kielbasa, and onion in a skillet. Pour corn and diced tomatoes with liquids on top and stir to combine.

  2. Cover and bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes. Add stuffing mix and stir well. Cover, remove from heat, and let stand for 5 minutes.

  3. Meanwhile, spray a large skillet with cooking spray; warm over medium-high heat. Whisk eggs together in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes.

  4. Add scrambled eggs to skillet and serve.

Cook's Notes:

If you want to serve this as a side dish for more people, add 8 eggs.

Eggs can be made to order as well. Seasoning is really not necessary as the stuffing mix, onion, and kielbasa have a lot of flavor already.
