This refreshing watermelon salsa is simple to make and great for summer parties. Use any type of onion you like. Anaheim chile peppers add just a touch of heat. Try it with jalapeños if you prefer.

Ingredients

  • 2 cups seeded and coarsely chopped watermelon

  • 2 tablespoons chopped onion

  • 3 tablespoons seeded, chopped Anaheim chile pepper

  • 2 tablespoons balsamic vinegar, or to taste

  • ¼ teaspoon garlic salt

Directions

  1. Combine watermelon, onion, and chile pepper in a serving bowl; stir in balsamic vinegar and garlic salt.

Cook’s Note

I like to cover and refrigerate this salsa for about an hour to blend flavors.
