3 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup white sugar

½ cup vegetable oil

2 eggs

1 cup shredded apple

¾ cup chopped walnuts

½ teaspoon vanilla extract
Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease one 4 1/2-x 8 1/2-inch loaf pan.

Mix flour, baking powder, baking soda, salt, sugar, oil, eggs, apple, walnuts, and vanilla in a large bowl until dry ingredients are just moistened. Pour batter into the prepared loaf pan.

Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 40 minutes.
Note
One cup of any shredded fruit or vegetable may be used in this recipe. Depending on what you use, you may need to add some water to the mixture. We suggest adding only 1 tablespoon at a time, just until ingredients are evenly moist.
