1 large onion, sliced

4 slices cooked bacon

salt and pepper to taste

¼ cup water

1 cup bread crumbs

1 teaspoon soy sauce

1 cup shredded Cheddar cheese

½ grated Parmesan cheese
Directions

Melt butter in a large skillet over medium-high heat. Mix in zucchini, tomatoes, onion, and bacon. Season with salt and pepper; pour in water. Cover and cook, stirring occasionally, until vegetables are tender, about 10 minutes.

Stir bread crumbs and soy sauce into the skillet. Mix in Cheddar cheese. Cover and continue cooking until cheese is melted, about 2 minutes. Sprinkle with Parmesan cheese to serve.
