Roasted Asparagus with Bacon and Cheese

Here's an easy-to-follow roasted asparagus recipe, with crisp bacon and just a little shredded cheese.

Ingredients

  • 1 pound asparagus, tough ends trimmed

  • 3 slices bacon, cut into bite-sized pieces

  • 1/2 ounces freshly shredded white Cheddar cheese

  • salt and freshly ground black pepper to taste

  • 1 lemon wedge

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Place bacon in a large skillet and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.

  3. Lightly coat a baking sheet with bacon grease. Lay asparagus evenly onto the baking sheet.

  4. Roast asparagus in the preheated oven for 5 minutes. Remove from the oven; squeeze juice from lemon wedge evenly onto asparagus. Sprinkle with bacon and shredded cheese. Season with salt and pepper.

  5. Return to the oven, and cook until cheese is melted, about 3  minutes more.
