Ingredients

1 lime, halved crosswise

3 slices fresh ginger, plus more for garnish

1 sprig fresh mint

ice as needed

2 fluid ounces purchased carrot juice

1 ounce silver tequila

1/2 fluid ounce chile liqueur or Ancho Syrup (see recipe, below)

1 1/2 fluid ounces ginger beer
Directions

Cut 1 lime half into 4 pieces; add to a cocktail shaker with ginger and mint sprig. Muddle mixture until combined, well crushed, and juicy, about 1 minute.

Fill the cocktail shaker half full with ice. Add carrot juice, tequila, and chile liqueur to shaker; cover and shake until outside of shaker is frosted, about 60 seconds. Strain into an ice-filled cocktail glass and top with ginger beer. Cut a lime wheel from remaining lime half. Garnish cocktail with lime wheel and ginger slices.
Cook’s Note
For a booze-free version, omit tequila and increase carrot juice to 3 ounces. Omit chile liqueur and substitute 1/2 ounce Ancho Syrup.
Ancho Syrup: Seed 1 dried ancho chile and tear into pieces; add to a small saucepan with 1/2 cup each sugar and water. Bring to a boil, stirring until sugar is dissolved. Remove from heat. Let steep, covered, 20 minutes. Strain out chile solids. Chill in an airtight container for up to 1 week.
