2 pounds sweet potatoes, cut into bite-sized pieces

Directions

Preheat the oven to 425 degrees F (225 degrees C). Stir onion powder, garlic granules, paprika, sugar, coriander, salt, oregano, and parsley together in a small bowl; set seasoning aside.

Add sweet potatoes to a large bowl or resealable plastic bag. Add the oil; sprinkle in about 1 tablespoon seasoning. Toss to coat potatoes. Extra seasoning can be stored in an airtight jar.

Bake in the preheated oven until tender, about 25 minutes.
