Sheldon Simeon

Born in Hilo, on the Big Island, Sheldon attended Maui Culinary Academy in Hawaii and was a finalist on Bravo's Top Chef season 10 in Seattle, winning Fan Favorite. His first solo restaurant, Tin Roof, in Kahului, Maui, serves local dishes like poke, kau kau tins, sandwiches, and noodles in takeout bowls.

Experience

Simeon started his career as a dishwasher and prep cook at Aloha Mixed Plate out of culinary school, graduating to opening head chef of sister restaurant Star Noodle in Maui in 2010, where he was essentially discovered. He helmed Migrant at the Marriott in Wailea in 2014 and opened Lineage in Wailea in 2018.

In 2011, the James Beard Foundation nominated Simeon for Rising Star Chef of the Yea, and in 2012, he won Food & Wine's crowdsourced title of People’s Choice Best New Chef for the Pacific & Northwest. Maui News named Simeon Maui’s Best Chef in 2013; Hawaii Magazine named Simeon among the Top 5 Best Hawaiian Chefs in 2014 and 2015; and in 2020 he was a James Beard Award semifinalist for Best Chef: Northwest & Pacific.

Simeon returned Top Chef in 2017 for season 14: Charleston, once again winning Fan Favorite. Food & Wine described his cuisine as "meshing his Hawaiian background with local produce and Asian techniques."


Education

Simeon studied at the Culinary Institute of the Pacific and Maui Culinary Academy.
