Superstar chef José Andrés is known for the fantastic Spanish-style barbecues he throws at home. In his backyard, Andrés has a barbecue pit from Texas Pit Crafters, plus two Josper oven-grills, which he can fuel with charcoal. Smoky Paella with Shrimp and Squid
Andrés is known for his paella. "You cook it outside like you do for barbecue, but at the next level of sophistication. It gives you many options, and you can feed a lot of people once you get the hang of it," he says of the dish filled with shrimp, rice, and squid.
Pincho Ribs with Sherry Glaze
These smoky ribs are named after Spanish snacks called pinchos. Chef Jason McCullar rubs them with a smoked-paprika spice blend, then lacquers them with a sherry-spiked glaze. For an ideal cocktail snack, look for riblets, a half portion of baby back ribs; they're especially meaty. Or ask your butcher to split your rib racks crosswise.
Fideos with Shrimp, Ham, and Clams
Fideos are thin, toasted noodles often used in a paella-like dish known as fideuà. Chef Chris Ainsworth cooks his fideos over the grill with a saffron-scented ham-hock broth and head-on prawns, but the recipe works just as well with standard shrimp.
Smoked Paprika-Rubbed Steaks with Valdeón Butter
A tender rib eye gets delicious flavor from a smoky garlic marinade, as well as the butter mixed with Valdeón, an intense and creamy Spanish blue cheese.
Spanish Pork Burgers
Sang Yoon, chef and owner of Father's Office in Los Angeles, makes some of America's best burgers. He flavors his succulent pork patty with Spanish ingredients like piquillo peppers and serrano ham. "Spain," he says, "performs miracles with pork."
