Ray Isle: Wine & Potato Chip Pairing

Ray Isle, Wine Editor for Food & Wine magazine, and Jonathan Pullis, Master Sommelier and Manager/Wine Director at 7908 in Aspen, take us through a "very, very serious" topic: pairing potato chips & wine. If you've ever gotten nervous about pairing foods with wines, worry not. Wine is very adaptable, as this demonstration will show you.

  • Wine #1: 2012 Bollinger La Grande Année

    Sea salt chips pair well with the bubbles and bright acidity of champagne.

  • Wine #2: 2020 Silverado Vineyards Borreo Ranch Kerner

    Pair with a salt & vinegar chip - notice how the wine tastes less acidic than it did before, and you pick up the fruit more.

  • Wines #3 and #4: 2018 Benovia Russian River Chardonnay and 2018 Domaine Chanson Pernand-Vergelesses 1er Cru Les Vergelesses

    Try both the Chardonnay and the Pernand-Vergelesses with a sour cream & onion potato chip, and observe which one you think pairs best.

  • Wine #5: 2019 Robert Biale Vineyards Black Chicken Zinfandel

    Pair with a barbecue chip - this is a pretty robust zinfandel, and with this sweet & smoky chip, you'll definitely notice a change in the wine.

  • Wine #6: 2020 Weingut Fritz Haag Brauneberger Jufer Kabinett Riesling

    A spicy chip, like the calabrian chili chip used in this demonstration, "craves" the balance of this off-dry Riesling.

  • Wines #7 and #8: 2014 Musella Amarone and NV Hidalgo Gobernador Oloroso Seco

    Blue cheese can be difficult to pair with wine - so Ray took a guess! Try with both the rich Amarone and the dry Oloroso sherry. He thinks one will work with this chip. What do you think?
