Pollack recommends having the option to cap your dispenser completely so that the oil doesn't come into contact with as much air when it's not in use. "Avoid pouring spouts that are continuously open to the air unless you are actively cooking," she says. Look for a spout that seals, either with a flip-top cap or some kind of rubber or silicone topper to keep air out.
