Ingredients

  • 2 large potatoes

  • 2 large carrots

  • 2 medium zucchini

  • 1 large onion

  • 3 beaten eggs

  • 1/2 teaspoon salt

  • 1/8 teaspoon pepper

  • 3/4 cup matzo meal

  • 1/3 cup vegetable oil

Directions

  1. Child:Peel the potatoes and carrots. Put the potatoes in a bowl of cold water. Adult with child: Use a food processor to carefully grate the zucchini, potatoes, carrots and onion.

  2. Child:Combine the vegetables, eggs, salt and pepper. Add the matzo meal. Shape the mixture into flat pancakes using 1 to 2 tablespoons of batter for each.

  3. Adult with child:Fry the latkes in about 2 tablespoons of hot oil for 1 1/2 to 2 minutes per side; add oil as needed. Drain on paper towels. Serve hot with applesauce.
