These fluffy breakfast egg muffins are light, vibrant, and easy to make. They are individually-sized breakfast bites that you can prepare for family or group meals, make for a simple grab-and-go snack for the week, or keep on hand in the fridge as a fun way to switch things up your everyday skillet egg dishes.

Savory sausage, fluffy eggs, and sharp Cheddar cheese come together for these egg muffins, and every bite is a little bit of the perfect breakfast. With the addition of bread, warming spices, crisp scallions, and creamy milk, these muffins resemble the taste and texture of a lovely brunch frittata. 

Egg muffins store well for up to a week in the refrigerator, making them perfect as a make-ahead breakfast or snack. Coating a muffin pan with non-stick cooking spray will lessen the possibility of having your muffins stick to the pan, but preparing them in parchment cups is a closer guarantee for a no-muss, no-fuss cooking process—and a lot less soaking of your pan later.

Ingredients

  • 1 (1-lb.) package ground pork sausage

  • 12 large eggs

  • 1/3 cup milk

  • 1 slice white sandwich bread, cut or torn into ¼-inch pieces

  • 1/4 cup chopped scallions

  • 3/4 tsp. dry ground mustard

  • 1/2 tsp. garlic powder

  • 1/2 tsp. kosher salt

  • 1/4 tsp. black pepper

  • 3/4 cup shredded Cheddar cheese

Directions

  1. Gather ingredients:

  2. Preheat oven, and prep pan:

    Preheat oven to 350°F. Coat a 12-cup muffin tray with cooking spray or line with parchment muffin liners.

  3. Cook sausage:

    Brown sausage in a large skillet over medium-high, stirring often, 8 to 10 minutes or until sausage crumbles. Remove from skillet and drain well.

  4. Make egg mixture:

    In a large bowl, whisk together eggs, milk, bread, scallions, ground mustard, garlic powder, salt, and pepper until well-combined.

    Stir in cheese and sausage.

  5. Fill muffin cups, and bake:

    Divide egg mixture evenly into each prepared muffin well.

    Bake 20 to 25 minutes, until golden brown and set.
