4 thick-cut, boneless pork chops (about 1 in. thick)

1/2 tsp. seasoned salt

1/2 tsp. ground black pepper

1 tsp. vegetable oil

1 (10-oz.) can cream of chicken or cream of mushroom soup

1/2 cup sour cream

2 tsp. cornstarch
-
1 tsp. dried thyme
-
1 tsp. granulated garlic

1 tsp. granulated onion

1 cup shredded sharp Cheddar cheese, divided

1/4 cup thinly-sliced scallions
-
1 cup mashed potatoes

Hot cooked rice or mashed potatoes, to serve
Directions

Prepare oven:
Preheat the oven to 350°F. Gather your ingredients.

Season the pork chops:
Blot the pork chops dry with paper towels and sprinkle on both sides with salt and pepper.

Brown the pork chops:
Heat the oil in a large, oven-proof skillet, preferably cast-iron, over medium-high. Add the pork chops and brown on both sides, 2 to 3 minutes per side.

Make the sauce:
Meanwhile, stir together the soup, sour cream, cornstarch, thyme, granulated garlic, and granulated onion. Stir in 3/4 cup shredded Cheddar cheese.
Scoop over the pork chops in the skillet.

Bake the pork chops:
Bake for 15 minutes.
Remove from the oven, and sprinkle with the remaining 1/4 cup cheese and the scallions.
Return to the oven for 5 to 10 minutes, or until the pork chops reach 145°F on an instant-read thermometer. Serve warm with rice or mashed potatoes, if desired.
