Cucumber-And-Onion Dip

A mash-up of two favorite party flavors, in an easy dip form.

Calling all fans of onion dip and cucumber salad—this inspired Southern mash-up is for you! Diced red onion and fresh cucumbers join forces with tangy sour cream and just a touch of mayo with ranch seasoning for a zesty kick. Serve this fresh and fast appetizer with sturdy kettle chips to scoop up all the goodness.

Ingredients

  • 1 1/2 cups sour cream

  • 1 cup peeled, chopped English cucumber (from 1 medium [9 1/2 oz.] cucumber), plus more for garnish

  • 1/2 cup mayonnaise

  • 1/4 cup chopped red onion (from 1 small [5 oz.] onion), plus more for garnish

  • 2 tsp. ranch dressing mix (from 1 [1-oz.] envelope)

  • 1/4 tsp. kosher salt

  • 1/4 tsp. black pepper

  • Chopped fresh flat-leaf parsley

  • Wavy potato chips

Directions

  1. Stir together sour cream, cucumber, mayonnaise, red onion, ranch dressing mix, salt, and pepper in bowl until well combined. Cover, and refrigerate at least 30 minutes or up to 36 hours. Garnish with parsley, cucumber, and red onion; serve with chips.

Make Ahead

Making this dip and refrigerating in the serving dish you plan on serving it in is a great time saver and dish saver. If you forget until right before party time, this dish is great after 30 minutes, but you can also make it up to 3 days in advance. Stir before serving.
