Ingredients

  • Cooking spray

  • ½ cup apple cider or apple juice

  • 1 Tbsp. cornstarch

  • 6 cups peeled, thinly sliced Honeycrisp apples (3 to 4 large apples)

  • ⅓ cup packed light brown sugar

  • 1 Tbsp. fresh lemon juice

  • 1 ¼ tsp. ground cinnamon, divided

  • ⅛ tsp. kosher salt

  • ¼ cup unsalted butter, melted

  • 1 sleeve buttery round crackers (such as Ritz; 3 ¾ oz.), crushed

  • 1 cup shredded sharp or mild Cheddar cheese

Directions

  1. Preheat oven to 350°F. Coat an 11 x 7–inch baking dish with cooking spray.

  2. Whisk together cider and cornstarch and set aside. Combine apples, sugar, lemon juice, 1 teaspoon cinnamon, and salt in a large skillet over medium heat; cook, stirring occasionally, until apples release liquid and start to soften, 5 to 6 minutes. Stir in cider mixture; cook until thickened and glossy, 2 to 3 minutes. Pour apple mixture into prepared baking dish.

  3. Combine butter and remaining ¼ teaspoon cinnamon in a medium bowl; add crushed crackers and toss to combine. Sprinkle cheese over apple mixture; sprinkle cracker mixture over cheese. Bake casserole, uncovered, at 350°F until filling is bubbly and topping is browned, about 30 minutes. Serve warm.
