There are more styles of cobbler in the South than we can count on two hands, yet there’s always room for updates to old favorites, such as this cake-like strawberry cream cheese cobbler.

All you have to do is whisk together a quick batter to pour into a buttered baking dish. Scatter sliced fresh strawberries over the batter, dot the top with spoonfuls of a simple sweetened cream cheese mixture, and then pop it in a preheated oven. In about an hour, you’ll have a warm, buttery, fruity cobbler ready to enjoy. This recipe is so easy that anyone can confidently bake homemade cobbler with great results.

Ingredients for Strawberry Cream Cheese Cobbler

In this recipe, butter and cream cheese get equal billing, and while you may not typically associate cream cheese with fruit cobblers, once you try this dessert, you will understand the role the four ounces of softened cream cheese plays here.

Of course, the starring role of this strawberry cream cheese cobbler is, you guessed it, strawberries. Six cups, or 1 1/2 pounds, of this seasonal red berry are used in the recipe, along with several items you likely have in your pantry.

This recipe also calls for:

  • flour
  • granulated sugar
  • baking powder
  • salt
  • powdered sugar
  • vanilla
  • whole milk

Whole Milk Substitute

If you don’t have whole milk on hand, you may substitute half and half. Because half and half is richer than regular milk and has a higher fat content, you can mix in a little water if you’re worried it’ll be too rich.

How To Serve Strawberry Cream Cheese Cobbler

As tempting as it may be to dive right in and dish up a piece of this cobble as soon as it comes out of the oven, it’s best to wait about 20 minutes before slicing and serving. Cool the pan on a wire rack, and try to distract yourself with something else until it’s cooled enough to enjoy.

Strawberry cream cheese cobbler is best served warm. Reheat a single serving in the microwave if it has cooled completely (after your first snacking). If the dessert is being served the next day, just pop the whole pan in a 250°F oven for 8 to 10 minutes, or until it feels warm to the touch and a butter knife inserted in the center feels warm.

The dessert doesn't really need anything besides the powdered sugar dusting to finish, but to take things up a notch, serve it with freshly whipped cream or a scoop of vanilla—or strawberry—ice cream

Why We Love This Strawberry Cream Cheese Cobbler

Everyone knows strawberries and cream cheese are a match made in heaven. Strawberry cheesecake and its sibling, strawberry shortcake cheesecake, are classics; they’re also not the most foolproof desserts to make at home.

Fortunately, there are other desserts, like this strawberry cream cheese cobbler, utilizing the juicy red berries and tangy cream cheese that require minimal effort compared to a New York-style cheesecake

Plus, cobblers are so satisfying; their cake-like texture providing a perfect contrast to ripe, juicy berries that somehow become even more delicious as they bake in the oven with a buttery base resulting in a crispy, slightly crunchy crust.

This recipe only uses two mixing bowls, and you don’t even need beaters or a mixer, just a spoon and a whisk. Unlike cheesecake, where mastering presentation can be tricky, this strawberry cream cheese cobbler always looks gorgeous and tastes even better. It’ll also hold in the fridge for two to three days—that is, if you somehow manage to make it last that long.

Ingredients

  • 1/2 cup (4 ounces) unsalted butter

  • 4 ounces cream cheese, softened

  • 1 cup plus 2 tablespoons granulated sugar, divided

  • 1 1/2 cups (about 6 3/8 ounces) all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon kosher salt

  • 1 1/2 cups whole milk

  • 1 teaspoon vanilla extract

  • 1 1/2 pounds fresh strawberries, hulled and halved (about 6 cups)

  • 1 tablespoon powdered sugar

Directions

  1. Prepare pan and oven:

Preheat oven to 350°F. Place butter in a 13- x 9-inch glass or ceramic baking dish. Place in preheating oven until butter is melted, about 6 minutes. Remove from oven, and gently swirl until butter coats bottom of dish.

  2. Make cream cheese mixture:

Combine cream cheese and 2 tablespoons of the granulated sugar in a medium bowl. Mix with a rubber spatula until smooth; set aside.

  3. Make cobbler batter:

Whisk together flour, baking powder, salt, and remaining 1 cup granulated sugar in a large bowl. Gradually add milk and vanilla, whisking just until combined.

  4. Add batter to pan:

Pour batter over melted butter in prepared baking dish. Do not stir butter into batter. Arrange strawberries in a single layer over batter; scatter tablespoonfuls of cream cheese mixture over strawberries.

  5. Bake cobbler:

Bake in preheated oven until top is golden and edges are bubbling, 50 to 60 minutes. Let cool on a wire rack, about 20 minutes. Dust with powdered sugar, and serve warm.
