Simple syrups, as the name suggests, are an easy way to add flavor to any recipe, especially cocktails, and this Strawberry Simple Syrup is no exception.

To yield a beautiful clear red color, make sure to skim any foam off the surface while cooking, and avoid pressing down on the solids when straining the syrup. And if you don’t like your cocktails too sweet, fear not. The simple syrup lends a subtle strawberry flavor and bright red color to this cocktail, without overwhelming the flavors of the fresh mint and white rum.

For more color or sweetness, just add an extra splash of syrup. And if you find yourself with a lot of extra syrup, you can use it in lemonade or as a drizzle on pancakes. 

What is a Strawberry Mojito Made Of? 

A classic mojito is made from rum, lime juice, muddled mint, seltzer, and sugar. Our strawberry version includes all the same ingredients, but uses a fresh strawberry-infused simple syrup instead of sugar to subtly flavor the classic cocktail and give it a beautiful pink color.  

Does a Strawberry Mojito Contain Alcohol? 

Yes, a strawberry mojito t contains white rum, but you can skip the alcohol and serve it as a refreshing mocktail

What is the Difference Between a Mojito and Daiquiri?

Both are classic cocktails made with rum, but they aren’t the same drink. A daiquiri combines rum with lemon and/or lime juice, sugar, and crushed ice.

The mojito, which also contains rum, sugar, and lime, additionally contains seltzer water and mint, and is usually served over ice cubes.

Ingredients

  • 4 fresh mint leaves, plus more for garnish

  • 2 Tbsp. Strawberry Simple Syrup (recipe below)

  • 1/4 cup (2 oz.) white rum

  • 2 Tbsp. fresh lime juice (from 1 lime) 

  • Chilled club soda

  • Lime wheel

  • Fresh strawberry half

Directions

  1. Lightly muddle mint with Strawberry Simple Syrup in a cocktail shaker. Add rum, lime juice, and enough ice to fill shaker, and shake vigorously 15 seconds. Strain into a highball glass filled with ice. Top with club soda. Garnish with mint, a lime wheel, and a strawberry half.

Bring 1 qt. fresh strawberries (hulled and quartered) and 2 1/2 cups water to a boil in a saucepan over high. Reduce heat to low; simmer until mixture is slightly reduced, about 20 minutes. Skim off any foam from surface. Pour strawberry mixture through a fine mesh strainer; discard solids. Stir in 2 1/2 cups granulated sugar until dissolved, about 2 minutes. Let cool to room temperature, about 1 hour. Store in an airtight container in refrigerator for up to 3 weeks.
