How To Make Vanilla Cookies

This recipe is a classic homemade cookie recipe, simple and straightforward. The full recipe is below, but here's a brief outline:

  • Make the cookie dough: Combine the dry ingredients. Cream the butter and sugar to add air so the cookies will be fluffy and light. Be sure to scrape down the sides so it's all well mixed. Add the vanilla extract and eggs, and lastly, stir in the dry ingredients.
  • Scoop cookies: Use a 2-tablespoon scoop, and drop dough on parchment paper-lined baking sheets.
  • Bake cookies: Bake several minutes until the edges are set and the cookies are just beginning to turn golden. Remove from the oven, and cool completely.

Can You Make Vanilla Cookies in Advance?

Yes, you can make the dough in advance, and you can make the cookies ahead, too.

Freeze cookie dough: Make, scoop, and freeze the cookie dough until hard. Then, move the cookie dough balls to a freezer bag, and store up to 3 months. When you're ready to enjoy them, bake from frozen, adding a few more minutes to the clock so the cookies will be perfect.

  • 1 large egg

  1. Prepare oven and baking sheets:

    Preheat oven to 375°F with one oven rack in upper third and one in lower third of oven. Line 3 baking sheets with parchment paper.

  2. Prepare the cookie dough:

    Whisk together flour, salt, and baking soda in a medium bowl.

    Place butter and sugar in a large bowl; mix with an electric mixer at medium speed until fluffy and well combined, about 2 minutes.

    Beat in vanilla, then beat in egg.

    Add flour mixture; beat at low speed until just combined.

  3. Scoop cookies:

    Scoop dough with a 2-tablespoon cookie scoop onto prepared pans, 10 per pan.

  4. Bake cookies:

    Place 2 pans in oven. Bake until barely lightly browned around the edges, 8 to 10 minutes, rotating pans halfway through the cook time.

  5. Cool cookies:

    Remove from oven and cool cookies on pans for 2 minutes before transferring to a wire rack. Repeat with remaining dough.
