This recipe uses all the classic ingredients of French toast: brioche bread, eggs, heavy cream, milk, cinnamon, butter, and brown sugar—plus a few more to boost the flavor of the casserole. 

After you gather all your ingredients, make your crumble and set aside. Toss your brioche bread with the wet ingredients and add to a 9x13-inch baking dish. Top with granulated sugar and the brown sugar crumble. Then, bake for about 35 to 40 minutes, or until the casserole is set and the French toast is a nice golden brown.

  • To cut down on prep time, the egg and milk mixture can be made ahead of time and used when you need it. The cinnamon crumble can also be made ahead of time and stored at room temperature for about 2 days until ready to use.
  • Everyone knows that slightly stale brioche bread makes the best French toast. It soaks up all the sweetness and cinnamon milk mixture. If you forget to put your loaf of bread out to create the stale texture you want, “put it in the oven on a sheet tray at 175 degrees F and let cook for about 20 minutes, or until dried out.”
  • If you don’t have the crowd or the appetite to finish this casserole in one sitting, simply cover the casserole tightly with aluminum foil and store in the fridge until you want more. To reheat, set your oven to 350 degrees F (175 degrees C) and add your casserole dish—still covered in aluminum foil—to the oven until fully heated through.

  • 1/2 cup packed light brown sugar

  • 1/2 cup all purpose flour

  • 1/4 cup unsalted butter, melted

  • 1/4 teaspoon kosher salt

  • 2 teaspoons ground cinnamon, divided

  • 6 large eggs

  • 2 tablespoons pure maple syrup, plus more for serving

  • 1 1/2 tablespoons vanilla extract

  • 1 (16-oz.) day-old brioche loaf, cut into 1-inch cubes

  • 2 teaspoons granulated sugar

Directions

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

  2. Stir together brown sugar, flour, melted butter, salt, and 1/2 teaspoon of the cinnamon in a medium bowl until crumbly; set aside.

  3. Lightly coat a 9-x 13-inch baking dish with cooking spray. Whisk together milk, heavy cream, eggs, maple syrup, vanilla, and remaining 1 1/2 teaspoons cinnamon in a large bowl until fully combined. Toss cubed brioche in milk mixture until all pieces are moistened. (Milk mixture will not be completely absorbed.

  4. Transfer mixture to prepared baking dish, and sprinkle evenly with granulated sugar.

  5. Sprinkle brown sugar mixture evenly over top of bread mixture. Let casserole stand 10 minutes at room temperature.

  6. Bake in preheated oven until casserole is set and bread is golden brown and puffy, 35 to 40 minutes. Remove from oven, and serve immediately with additional maple syrup.
