This Caesar compound butter is flavored with anchovy paste, garlic, lemon, and parsley and pairs perfectly with steak or fish dishes. You can also serve it as a spread with fresh bread.

Ingredients

  • 2 sticks butter, softened

  • 1/4 cup freshly grated Parmesan cheese

  • 1 tablespoon finely chopped parsley

  • 2 teaspoons anchovy paste

  • 1 teaspoon Dijon mustard

  • 1 teaspoon lemon juice

  • 1/2 teaspoon lemon zest

  • 1 clove garlic, finely minced or grated

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Combine butter, Parmesan cheese, parsley, anchovy paste, mustard, lemon juice, lemon zest, garlic, salt, and pepper in a bowl and stir very well until evenly incorporated. Cover and refrigerate for at least 1 hour and up to 1 month.  Alternatively, Shape butter mixture into a log and roll in parchment or plastic wrap before refrigerating. Slice as needed.
