Ingredients

  • 16 ounces processed cheese (such as Velveeta®), cut into 1 inch cubes

  • 1 cup whole milk

  • 1 (15 ounce) can no-bean chili (such as Hormel®)

  • 1 tablespoon fresh lime juice (from 1 lime)

  • 1 1/2 teaspoons chili powder

  • 1 1/2 teaspoons paprika

  • 1 1/2 teaspoons ground cumin

  • 1 teaspoon kosher salt

  • 1/4 teaspoon cayenne pepper

  • 1/4 cup finely chopped white onion

  • 1/4 cup finely chopped fresh cilantro

  • 1 (9 ounce) package yellow or white corn tortilla chips

  • salsa, for serving

Directions

  1. Gather all ingredients.

  2. Heat a large cast iron skillet over medium-high heat. Add cheese and milk; cook, stirring often, until smooth, about 4 minutes.

  3. Stir in chili, lime juice, chili powder, paprika, cumin, salt, and cayenne. Cook, stirring occasionally, until heated through, about 5 minutes. Meanwhile, mix together onion and cilantro in a small bowl.
