Lemon Garlic Butter Baked Cod

This baked cod is a fast-to-prepare main dish. I like to boil some baby gold potatoes and mash them while the fish bakes, then serve the fish over mashed potatoes on a bed of lightly wilted spinach. The luscious butter sauce adds flavor to both the potatoes and spinach.

Ingredients

  • 2 tablespoons butter, softened

  • 1 tablespoon olive oil

  • 1 teaspoon lemon juice, or to taste

  • 2 cloves garlic, minced

  • 1 tablespoon chopped parsley

  • 1 teaspoon thyme

  • 1/8 teaspoon paprika

  • 1/8 teaspoon dill

  • 1/8 teaspoon salt

  • 2 (8-ounce) cod fillets

  • 1 lemon, sliced

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Mix butter, olive oil, lemon juice, garlic, parsley, thyme, paprika, dill, and salt together in a small bowl to make herb butter.

  3. Spread a small amount (1 to 2 teaspoons) herb butter in the bottom of a small baking dish, and place cod fillets on top. Top each fillet with about 1 tablespoon herb butter. Place lemon slices around cod.

  4. Bake in the preheated oven until cod flakes easily with a fork, about 20 minutes.
